A sure way to become a better brewer is to be able to recognize common off-flavors in beer. Many of these are produced during brewing, and others are produced during packaging and service. Recognition is key to be able to reduce these off-flavors.

This class teaches 8 main off-flavors that are found in beer using Siebel Institute Sensory Training Kits. You will learn how to recognize them by taste, where they come from, and how to prevent them. Essential for homebrewers and commercial brewers, those studying towards Cicerone or BJCP Certification, and serious beer enthusiasts.

Class will be taught by Annette May.

Annette became both a BJCP judge and a Certified Cicerone® in 2008, and since then has focused on beer education and encouraging people to explore the Cicerone® program. She has 20 years of experience working in the craft beer biz, with experience in bar management, retail store management, sales & distribution of craft beer, and beer education. In 2013 she began working for the Cicerone® Certification Program as an exam grader and proctor, and teaches the Cicerone® Certification Program’s Beer Off-flavour class and BeerSavvy® Bootcamp here in Metro Detroit. In March 2015 she started working full-time as a Beer Educator, and formed her Beer Education company, Know Beer! LLC, (www.knowbeer.org) designing & teaching classes, as well as conducting staff training and Cicerone Certification preparation. In the Fall of 2015 she joined the faculty of Schoolcraft College’s Brewing & Distilling Technology Certificate Program, teaching BDT120 -Beer Styles & Flavours, and BDT230-Beverage Service and Management.
